Onion is the basic ingredient used in most of the dishes cooked in our home. I love the smell when onion is sautéed in oil.
The aroma conjures up an image of something wonderful being cooked. It may turn out to be simply a vegetable dish, where as the ones who only love meat dishes maybe disappointed when the meal is served. It’s often the case with my son.
Onion enhances the flavor of every food — chat, haleem, pakoras, shami, and chupli kababs, meat dishes, rice, curries, Chinese dishes, vegetable dishes, and salads.
Curries are thickened with onions. When I was a beginner, and didn’t know the knowhow of cooking, my mutton curries were runny as water. I would try to thicken them with corn starch.😗
Onions pickled in vinegar has a delicious taste of its’ own.
Without onion — I don’t know what would I have done?
