Why do cookies taste better in a day or two?

The magic happens as they lie around

Taste improves as the ingredients mellow

Aren’t left any as I look here, and there

Who gobbled them up

Leaving a few crumbs

Since my last year scare issue with health, I eased up on ice cream, chocolates, and all those other sweet concoctions. I still crave something sweet after meals. Nowadays I go for a few aniseeds, or a cookie 🍪.

Here is a fabulous recipe for chocolate chip cookies:

Ingredients: 8 tbsp unsalted butter, 11/2 cups all-purpose flour, 1/2 cup light brown sugar, 1 egg, 1/3 cup sugar, 1/2 tsp baking powder, 1/4 cup cocoa powder, 1/2 cup chocolate spread, 2-3 drops vanilla extract, 1 pinch of salt, 5 oz (150 g) white chocolate chips.

Preheat oven to 350 F (180C). Cream butter, and both sugars in a bowl until the mix turns creamy. Beat the egg, chocolate spread, and vanilla extract into the mix.

Sift the flour, baking powder, cocoa powder, and salt. Add them to the choc mixture. Stir in the chocolate chips.

Place 6-7 spoonfuls of the cookie dough on a baking sheet, leaving space between so that they can spread as they bake. Depending upon your oven, it takes 10- 14 minutes. After taking them out of the oven, wait for 2-3 minutes for transferring them to a cooling rack. Enjoy 😊.

I got hold of this recipe from my very young granddaughter M4. Nola (daughter) lets her mess around. M4 has turned out to be a super baker, all thanks to her mama who has to clean the aftermaths of the tornados blown through her kitchen.
